Big John’s Texas BBQ offers the following catering menu which includes 1, 2 or 3 meats and Big John’s Homemade BBQ Sauce, your choice of 3 fresh made side dishes, Small Sandwich / Dinner Roll with butter and picnic set-up (plates, plastic ware & napkins).
Smoked Meats – Done the Texas way, just meat. That means y’all apply the sauce.
Pulled Pork - Whole Boston Butts that have been slow smoked until tender, and then hand pulled ready to serve.
Beef Brisket – Whole Packer USDA Briskets that have been slow smoked until tender, and then either sliced or chopped.
Chicken - Whole chickens that have been seasoned and smoked, and then served halved, quartered or pulled with a little seasoning and drippings thrown in.
Ribs – Whole spare, St Louis cut or Loin Back seasoned and smoked until tender.
Texas Hot Link (Earl Campbell’s) – Spicy Smoked Sausage imported from Texas.
Smoked Sausage – Hickory Smoked mild pork & beef sausage.
Side Dishes – Made by “Big” John just like back home with lots of flavor.
Baked Beans – Sweet and gooey with a Texas flare.
Ranch Beans – aka Cowboy Beans: Pinto beans mixed in a Chili style sauce (only with no meat).
Dean’s Bean’s – My cousin’s recipe Pinto beans slow cooked in a thin tomato both with Chorizo, Onion, Jalapeno and Cilantro.
Macaroni & Cheese – A four cheese blend mixed with elbow macaroni and baked to perfection.
Green Beans – Green Beans, onion and bacon.
Southwestern Style Corn – Yellow corn cooked with onion, red & green peppers in a butter chili sauce.
Sweet Corn Pudding – Sweet cream corn baked with masa (corn Flour), cheese, eggs & Jalapeno.
Potato Salad – Southern Style or Roasted Red Skin made fresh.
Cole Slaw – Sweet Creamy Slaw or Carolina Vinegar Slaw made fresh.
Texas Roasted Corn & Black Bean Salad – Roasted Corn & Black Beans with Green Onion, Red Bell and Jalapeno Peppers in a southwestern dressing.
Texas Black Eye Pea Salad (Texas Caviar) – Black Eye Peas with Red & Green Onion, Red Bell and Jalapeno Peppers in a southwestern style dressing.
Dinner Salad with Dressing – Iceberg Lettuce & Carrots mix with Red Onion and Cherry Tomatoes.

A signed acceptance of the proposal with the selected side dishes and 50% deposit is required 30 days prior to the event date. A final confirmation of the number of guests is required 10 days prior to the event. Final payment is due upon receipt the day of the event.
